Watermelon is one of my very favorite foods. I spent my childhood detesting it and I have no idea why because there’s little that tastes better to me now. On a hot day, there’s nothing like a big juicy slice of watermelon (or ten), or a frothy blended watermelon smoothie.
But sometimes I just don’t have the time to sit down and messily eat watermelon, or I have excess that I can’t finish up. It’s these times I opt for fresh watermelon juice. And every time I do, I ask myself why I don’t make it more often, it’s so good!
Today I have a recipe to share with you that is simply delicious. It’s refreshing and cooling, while also including a surprising kick of heat from the jalapeño. With the lime and mint as additional flavor sources, this juice packs a taste punch.
Fire And Ice Watermelon Mint Juice
- 3 cups watermelon
- Small handful of mint
- Juice of 1 lime
- 1/4 jalapeño, with or without seeds (add more as desired dependent on how hot your jalapeño is)
- Run each ingredient through a juicer one at a time. If you have organic watermelon, you can juice the rind and flesh.
- Taste and adjust jalapeño as desired.
- Stir, pour into a tall glass and prepare for pure yumminess!
