Raw Cauliflower Popcorn Recipe


My Raw Cauliflower Popcorn recipe has got to be one of my most blogged about about recipes ever.ย  Super easy to make, and a great replacement for store bought popcorn when you’re in the mood for a little crunch.

I outline the recipe below, along with a couple varieties that you might want to experiment with.

Raw Cauliflower Popcorn Ingredients:

  • Cauliflower (1 whole chopped in popcorn size pieces)
  • Nutritional Yeast (a whole lot, just pour it in, maybe 4-8 heaping teaspoons)
  • Sea Salt (1/2 teaspoon or more, to taste)
  • Black Pepper (just shake it on)
  • Olive Oil (1 teaspoon)
  • Water (just a splash)
  • Optional: Spirulina (make it green, 1-3 tablespoons)
  • Optional: Coconut Oil (just a teaspoon if you want some coconut flavor)
  • Optional: Cayenne (only if you are hardcore)


    1. Measure and prepare all the ingredients for the Raw Popcorn and put in a gallon size zip lock bag.
    2. Now shake that bag until your arms hurt.
    3. You can make it cheesier by adding more yeast, greener by adding more spirulina, and sticky by adding raw honey (only do that if you are going to dehydrate).

Note: You can eat the Raw Cauliflower Popcorn as-is, which I usually do, or you can dehydrate it overnight and it will shrink up into yummy little crunchy pieces. Be sure to go easy on the salt if you dehydrate as the flavors will intensify.

    I’ve tried the cauliflower popcorn a couple times now. The flavor is sensational but when I dehydrate the cauliflower it turns out rubbery and chewy as opposed to crunchy. What am I doing wrong?

    I’m wishy-washy when it comes to measuring, so maybe thats why I couldn’t quite get it to hit the spot. I cant seem to get a good balance, but its a great idea to use up cauliflower, I cant ever figure out what to do with it once I’ve brought it home lol ๐Ÿ™‚

    Okay, Call me crazy but I was just too curious about the nutritional content of this popcorn- well, the protein content mostly since there is so much (yay) spirulina (wow).
    This is what I came up with for 1 large head of cauliflower (6-7 inches diameter), 4 Tablespoons of spirulina, and 6 teaspoons of nutritional yeast:

    470 calories
    49 grams of protein (yay, I am happy bout this cuz lifting heavier weights these days)
    59 grams of carbs, of which 25 grams is FIBER (whoo hoo!)
    and 10 grams of fat (healthy fat, olive oil style)

    Hi Philip! Sounds like you are all settled into your new home! Exciting stuff you are doing with oils- nice! Just wanted to let you know I finally made this raw popcorn recipe tonight and I LOVE IT! Arianna brought some to Gnosis in the winter and I didn’t get around to making it until tonight (Arianna’s was dehydrated and soooo yummy). I’m not dehydrating mine though. I NEVER thought I could EAT spirulina!! WOW! I used to mix spirulina with water and drink it really fast cuz it tasted nasty. But now I can EAT it! And it tastes amazing! I used about 4 Tablespoons of spirulina and 6 teaspoons of nutritional yeast, and the rest of the recipe as you said. I am so happy to have this yummy study treat in my fridge now ๐Ÿ™‚ Thank you! *hugs*

    I tried this last night and they were great. I was a popcorn lover and that was one of the foods I most missed, especially during a movie. It’s from years of conditioning I guess.
    I also made a batch omitting the yeast and spirulina and adding some dulse and cayenne. That was really good too.

The doctors keep telling him what foods he can’t have, but he doesn’t know what yummy things he CAN have. I’ll dehydrate it and trust this will give him that crunchy salty snack food he’s missing!
