I’ve been loving a mix of creamy and fruity salads lately. Salads with fresh crisp greens, juicy and crunchy vegetables, creamy avocado slices and my new favorite fruit based dressing. This dressing is very simple but the flavor packs a punch due to the herbs, mango, garlic and ginger. It’s also extremely high in vitamins, minerals and antioxidants, and there’s even a lot of greens snuck into this dressing.
This dressing is great over a salad (or as one of two dressings like in this photo!), as a dip for vegetables or fruit, or even as a refreshing cold soup you can enjoy on its own. If you’re stuck in a rut of olive oil and vinegar dressings, or are trying to lighten up your evening meals with a lower fat alternative, this is a delicious option.
Springtime Mango and Herb Salad Dressing
- 1 large mango, flesh only
- 2 large handfuls spinach
- 3 tbsp fresh dill
- 4 tbsp fresh cilantro
- 1 small knob ginger
- 1 clove garlic
- Juice of 1 orange
- 1 stalk celery
- Place all ingredients in a blender and blend until very smooth.
- Use as desired.
This dressing is best used on the same day, ideally right after making it, for maximum freshness and enjoyment.
